Roasted Salmon with Honey Glaze
1 large or 2 medium salmon filets with skin on, about 10-12 oz
3 Tbs HONEY
Preheat oven to 425 F.
Line a rimmed baking sheet with parchment paper. Liberally salt and pepper the skin of the salmon and then place the salmon on prepared baking sheet skin-side down. Salt and pepper the flesh of the salmon and then drizzle with olive oil. Roast in the oven for 8-10 minutes or until the salmon is just firm to the touch. Drizzle and spread the honey evenly over the top and roast for another 2-3 minutes or until the salmon is almost cooked through and the honey is fragrant but not burned. Cover the pan with aluminum foil and allow to rest for 5 minutes. Serve hot with a green salad or steamed vegetables.

Asian: Add a splash of soy sauce, a few dashes of sriracha and rice vinegar, and a pinch of grated garlic and ginger.
Cajun: Add few shakes of your favorite cajun seasoning or make your own from garlic powder, onion powder, thyme, red and black pepper, and salt.
Italian: Add a splash of lemon juice and a pinch of italian seasoning or a pinch each of ground rosemary, dill, oregano, basil, and parsley.
